3 survival meals made with leftovers and bread

I call this slightly tongue-in-cheek post the Vagabond Edition of my continuing bread story. smirk

Anyway, if you’re in strict budget mode these are some meals with bread that you can go with and it’s still quite tasty…in it’s own way. πŸ˜‰

1. Bread with ketchup / chilli sauce

I read Roald Dahl’s first biography – Boy as a kid and there’s an anecdote about his growing years inside. He and his mates ate sandwiches with just a dash of ketchup to give it a bit of flavor while one greedy individual had his full of pork and wouldn’t share. I distinctly remember the meat being bigger than the sandwich.

I did this with those small leftover single serve packages of chilli sauce I found at home. You can eat it with the same packets of ketchup too. It tastes rather good actually, especially if you have an egg to nibble on.

I had sandwiches with a fried egg and chilli sauce when I was in primary school and those were my absolute favorite! This reminds me a bit of that. πŸ˜‰

2. Bread heaped with Milo / Ovaltine / any powdered malt drink

This is again another one from my childhood…and it tastes fabulous, but rather messy.

It’s for those times when you’re sick of dunking it in a hot malt drink and wants a different texture. The trick we used to make the powdered drink β€œstick” to the sandwich is sweetened condensed milk as a kid.

However, I found that kaya works too and the grainy texture of the powdered malt drink is delicious on bread! πŸ™‚

3. Bread with wine

People have been eating this for well over at least two thousand years…B.C. time. Jesus himself gave the last supper with bread and wine (albeit his was unleavened bread to conform with Jewish traditions at that time).

Just generously anoint the bread with wine and savor it.

It’s surprisingly delicious! The wine is one I haven’t even tasted myself, it was opened ages ago and I was half afraid it had turned into vinegar! It hasn’t. It works best with red wine, chilled. The dates are correct, Anno Domini means Year of our Lord but He was born long after 1 A.D. – there’s a dating mistake somewhere along the line during the switch from Before Christ to AD, it’s 6-7 years off.

I reckon it’s a fitting one for Sunday too with the Eucharist and all that. πŸ˜€

3 affordable and essential spreads for bread

I eat a lot of bread and this is my Top 3 list of essential bread spreads:

1. Cream cheese

This is a spreadable cream cheese that I’ve grown to love. It retails for about RM 7 for 200 grams – the same weight and price as those β€œmystery cheese” individually wrapped slices. I can’t say this is 100% real cheese either but it sure tastes a helluva lot better.

It’s creamy and savory! Made in Australia, the best thing about this small tub of cream cheese is that if you don’t consume it within 10 days it turns into sour cream – another *new* spread for your bread. smirk

I’m kidding, I don’t know what it turns into after 10 days coz I love the stuff.

2. Kaya (coconut jam)

Yup, this is a bread spread that we can count as our very own – made in Malaysia, something to be proud of. The word itself translates to English as β€œrich” and that’s exactly what the texture feels like. It’s a sweet concoction made of coconut and tastes like custard.

I usually get locally produced original ones (none of the pandan infused flavors for me) for RM 2.50. I also noticed that kaya goes better with softer bread e.g. the bran and wheat-germ types instead of 100% wholegrain.

3. Peanut butter

This is another staple of my fridge. I always go for chunky peanut butter – I’m not a huge fan of the smooth/creamy variety. I don’t like it cloyingly sweet either and I found this brand called Steffi’s Delight that’s made in the United States with no added sugar.

It really makes a lot of difference – it’s almost slightly salty and this brand also has visible chunks of peanuts. It’s cheaper than a lot of local brands too at RM 11 for over 500+ grams.

This kind of peanut butter works well with tougher breads like grain fortified 100% wholemeal/wholegrain. Lovely stuff, the only downside is the slightly disturbing use-by date of 2014…it’s gotta have a lot of preservatives inside for that kind of shelf life. 😑

I still eat bread with the stuff in 3 delicious and dirt cheap meals with bread but have bought a couple of spreads to spice things up a little. This is just a continuation of my…er, bread story after the DBKL spectacle.

3 delicious and dirt cheap meals with bread

I never eat white bread. It’s nutritionally inferior and I prefer the taste of brown bread nowadays anyway. I go for wholemeal/wholegrain (including the fad ones that has β€œenrichments” like Canadian Purple Wheat). It’s more expensive at RM 2.80 – RM 4.50 but definitely worth it for the additional vitamins for a balanced (hmm..) diet.

1. Sandwiches with surimi, sausages and boiled eggs

This is considered a treat in survival mode. Heh. The surimi is store brand and family pack sized for extra savings, the sausages are the ultimate manifestation of mystery meat (plus it’s on sale at under RM 2) and eggs are eggs – you need them.

Coincidentally, these are the same items I use to cook ramen. smirk

2. Bread with milk

Ah! The staple since time immemorial. I’ll suggest fresh milk – it’s well worth the price premium for the fortified essentials – fat, for one. πŸ˜‰

Just plain bread goes a long way with flavorful fresh milk. Don’t skimp and go the reconstituted crap or low fat variants – if you’re in survival mode, you’ll need those extra calories.

3. Bread dipped in raw egg

This is a surprisingly delicious combo that I discovered. You can do it with balsamic vinegar and olive oil…so why not raw egg?

Just crack one (chilled – leave it in the fridge for at least 24 hours) egg into a saucer and it can last for 4-5 slices of bread.

You can eat it by it’s own too, there’s taste and texture in some of the nut enriched ones and that’s what I do most of the time. These are just 3 examples are just to break the tedium of eating bread alone.

You know how it goes, man shall not live on bread alone. πŸ˜‰

Ghetto microwave a.k.a. Cooking with an electric kettle

Yup, it functions almost exactly like one. Heh. Okay, let’s say your microwave suddenly stopped working and you need to heat up something in a jiffy.

Ideally, you don’t have to clean up anything too, which you’ll need to if you use the traditional method of a wok and boiling water with the food suspended above.

This is based on the same principle – the steam from an electric kettle (hereby dubbed a β€œghetto microwave”) will do the same thing.

I did it with an awkward sized food item (in this case a sandwich/burger) that’s been in the fridge for a day. I just put some water in the ghetto microwave and turned it on. You don’t even need to hold the food there, just let the lid clamp over it.

There are only two downsides to this:

  • You need to rotate the food item to ensure thorough heating
  • You have to pop in and check on it once in a while coz the auto-shutoff mechanism won’t kick in when the lid is propped open like that

Stewed pig’s tongue

I figured a pig’s tongue would be rather long, considering the size of the greedy animal, but I was still surprised by the sheer length of it. It prompted me to do the Gene Simmons pose – reckon this pig’s tongue beats his anytime. πŸ˜‰

Well, since pig’s tongue is considered offal – it’s pretty cheap. I got it for RM 3.90 for the entire muscle. Tongue used to be a common food in England but they use ox tongue instead of our porcine friend. I don’t know how to cook it, but I figured I might as well give it a shot and see how it turns out.

I have worked with pig’s heart (both sliced in soup and with the entire organ in pasta), pig’s tail and even pig’s ears (which is quite delicious but missing from my archives due to a catastrophic category mishap). I’m not quite sure what to do with pig’s tongue but that’s never stopped me before. Heh!

I settled on slicing up the muscle into bite sized pieces after it has been defrosted. Give it a tongue lashing. Discipline it with your knife! It’s all muscle so I decided to marinate it first before stewing it.

You will need:

  • Pig’s tongue
  • A sharp knife (seriously)
  • Soy sauce (dark and light)
  • McCormick’s Season-All Salt
  • McCormick’s Italian Herbs
  • Ground black pepper (coarse)

I mixed everything into the sliced pig’s tongue and gently massaged the condiments into it. I don’t know if it makes a difference, I just felt like doing it. This is left for about 2 hours before the cooking process started.

Stewing pig’s tongue is easy – you just need to dump the marinated muscle into a pan and cook it slowly on low heat. Whenever you see the gravy evaporating, just add more soy sauce. I left it for about an hour, turning it over once in a while. You can still see the papillae and taste buds of the pig on the tongue! Amazing!

The finished dish tasted rather good to be honest. It’s not as tender as I’ll like it to be, but I reckon that can be remedied by smashing it with a hammer (or using meat tenderizer). It has a nice texture to it – it’s yielding, but firm. The chewy stewed pig’s tongue goes very well with steamed rice.

…and besides, there’s just something about introducing another animal’s tongue to your own that’s very appealing in itself. πŸ™‚

Bah Kut Teh Recipe #3: Bak kut teh soup with pig’s heart

A proper bak kut teh dish MUST have pork in it. It doesn’t matter what cut of pork (or offal) but the oink must be in the soup at some point.

This is the third and final installment of a three-step cooking process with my bak kut teh recipe. The first one is Chik kut teh with oily chicken rice and the second is the simple Bak kut teh ramen with drumstick and egg.

Here comes the final dish of the series (sorry for the delay) where the bak kut teh soup has been stewed through all those two recipes, absorbing all the tastes and flavors in the process. The soup is delicious. It’s orgasmic. It just needs:

Well, a pig’s heart anyway. These things are pretty cheap, you can get a whole pig’s heart for about RM 4. I’ve cooked with pig’s heart before and can attest to the taste and texture of this wonderful organ in the portfolio of porcine delights.

Start by slicing the pig heart into manageable pieces…

…before dumping it into the soup. There’s a lot of clotted blood inside the poor pink animal’s heart and you might want to remove that or just cook it as clotted blood. It really doesn’t make much of a difference as long as you wash it first. πŸ™‚

Let the pig’s heart simmer for about 30 minutes and you’ll end your bak kut teh adventures on a high note. The broth is hearty and the pig’s heart is chewy and absorbs all the flavors, producing a delectable slice of <3.

Bah Kut Teh Recipe #2: Bak kut teh ramen with chicken drumstick and egg

This is the second meal that we usually have after a bak kut teh cooking session. Remember the first recipe of chik kut teh with oily chicken rice? You’ll still have a lot of leftover BKT soup after that so here’s a quick and easy meal for breakfast!

Take a chicken drumstick out of the fridge and dump it straight into the leftover soup. I didn’t defrost it so as you can see, the intense change from freezing cold to boiling hot warped the bone of the chicken. Heh! You just need to boil this on high heat for 3 minutes for the chicken to cook.

Next, transfer the cooked chicken drumstick and a bit of bak kut teh soup into a smaller cooking pan. I do this to avoid stray bits of noodles from going into the main BKT pot. Crack an egg into the new pan of soup for a more complete ramen meal. It’s probably wise to use low heat now if you like your eggs to be firm and yet have a runny yolk.

The final step is to open a packet of ramen and put the brick of instant noodles into the soup. The best thing about this is that the BKT soup is more than tasty enough to stand on its own and as a bonus, you have extra ramen flavor sachets which you can use in the future. I love eating 3 packets of instant noodles with 4 packets worth of flavor sachets. πŸ˜€

Let it cook for about 3 minutes and you’ll have a healthier version of ramen – a hearty bak kut teh broth ramen with chicken drumsticks and an egg. You can also try adding crab sticks if you like your breakfast ramen with more condiments. It’s delicious! πŸ™‚

Bah Kut Teh Recipe #1: Chicken bak kut teh with oily chicken rice

Bak kut teh or pork bone soup is a hearty herbal delight that’s very versatile and delicious. We’ve come across a routine that can make the same BKT soup last for 3 meals with three very different recipes. However, I hear you asking – Why chick kut teh?

Well, for one thing, pork is damn expensive in KL. It’s really cheap in Sarawak. However, the main reason is coz this is fast and easy to cook without compromising on taste!

I remember when I was a kid, there was this huge Nipah scare and everyone stopped consuming pork. Chik-kut-teh outlets practically sprouted like mushrooms overnight! There were even dedicated chick-kut-teh restaurants when people started saying that it tasted just as good as pork. However, they were all gone within a year and people went back to eating real pork bak kut teh when the outbreak was over. Heh!

Note that this recipe is still not halal since we found the BKT package in the non-halal section of the hypermarket.

You will need:

  • Yew Chian Haw Bah Kut Teh herbal mix
  • OXO cubes chicken stock
  • Quintessence Garlic & Parsley infused oil
  • Chicken drumsticks
  • Garlic
  • Salt

This was actually inspired by the photo on the BKT package. You can use any brand you like but we found that this is the best tasting one we’ve come across so far. Yew Chian Haw BKT mix can be located hanging beside the open meat refrigerated shelves in the non-halal section. The ingredients are fresh and the bak kut teh package has to be put in the fridge (crisper section) so it won’t go bad, unlike regular ones which can be stored at room temperature. It serves 4-6 people and that’s how we managed to extend this into three meals.

It’s the second time we’ve cooked this. Drumsticks are the best cut of chicken that you can use – BKT soup requires a bone based meat for flavor. The trick is in the marrow that leaches out after boiling. πŸ™‚

First off, bring about 3 liters of water to boil and dump in the contents of the bak kut teh package. Put in two whole bulbs of garlic and add 2 heaped tablespoons of salt to the pot. The garlic tastes great when eaten like that. Unfortunately, we only had about 3/4 of a bulb left so we put in the cloves of garlic instead.

It’s important to note that you should not peel the garlic or it’ll disintegrate during the boiling process.

Let the soup boil for about an hour on high heat and turn off the stove. Add in the chicken drumsticks and continue to let it simmer for another half hour on low heat. You can put in as many chicken drumsticks as you want – we put in 5. I usually eat 3 drumsticks and my girlfriend eats two.

While all that is happening, prepare the oily chicken rice by dissolving an OXO chicken cube into some water and adding it to the rice. We use 1 chicken stock cube for every two cups of rice.

Pour about a teaspoon of oil into the rice and chicken stock mixture and turn on the rice cooker.

The garlic infused oil makes the rice taste richer and the bits of parsley lends a bit of much needed color into the entire shebang.

Scoop out the chicken drumsticks after the 1 1/2 hours of boiling is up and serve it with the oily chicken rice. You can chuck the BKT stock in the fridge for future use – it’s only going to get better each time as it absorbs the essence of each meal. πŸ™‚

The garlic and parsley infused chicken rice goes very well with the piping hot chik kut teh. The drumsticks have absorbed the herbal notes of the BKT soup and it’s delicious! The meaty herbal soup complements the oily chicken rice and it’s great for those rare cold nights.

Easy no-marinade caramelized garlic chicken leg

I used to nuke a lot of β€œAsian marinated drumsticks” when I was in high school in Christchurch, NZ. It’s sold at Countdown (one of the largest hypermarket chain) and I just put it in the microwave when I felt like a snack. I set it for 1 minute on high for each drumstick and it tasted really good…well, as far as microwave food can taste.

Now, I got thinking about that good ol’ comfort food that helped me through the cold winters and I decided to make my own version. The β€œAsian marinate” is nothing more than soy sauce and I reckon I could make a far better version. I managed to come out with a delectable dish – it’s so good I’m drooling as I write this. πŸ˜€

You will need:
Whole chicken leg
Dark sweet soy sauce
Light salty soy sauce
Garlic
Sugar (a lot of it)

Chicken legs are an excellent cut for this dish. It has just enough of the fattier bits of the chicken for a whole meal. Now, when we cooked this for the first time we were both very hungry and didn’t feel like taking the time to marinate the chicken. That turned out to be an excellent decision. The no-marinade caramelized garlic chicken leg was born and here’s how it goes! πŸ™‚

First, put the chicken leg inside the cooking pot and dump in the dark and light soy sauce. Add your 4 tablespoons (not teaspoons – tablespoons) of sugar and let the heat caramelize it for a bit.

Next, peel at least an entire bulb of garlic and put the cloves in whole. You need the entire chicken leg to be covered so add a bit of water if you need to. Let the chicken simmer in the pot for about 30 minutes.

It’s now ready to serve! Just take out the chicken leg and pour a bit of the sauce on top of it. Remember to spoon out all the garlic, it tastes heavenly with it.

This method of cooking the chicken tastes even better than marinating it. The slow simmering process tenderizes and allows all the flavors to be absorbed into the chicken. It’s absolutely fabulous – sweet and garlicky. It goes really well with steamed rice and the sauce is to die for.

Garlic fans would LOVE this. I can eat plates of rice with just the caramelized sauce and melt-in-your-mouth garlic cloves.

Just remember your breath mints after having this for dinner. smirk
