Our traditional fish pie for New Year’s Eve dinner

Fish Pie

I wanted to have a traditional British fish pie for New Year’s Eve dinner so I used ½ fresh salmon and ½ smoked salmon with snow crab meat for a pie. I actually modified Jamie Oliver’s fish pie recipe which used half smoked haddock and half fresh salmon for a “smokier” dish than all fresh fish.

Salmon Fillet Steak

The salmon I got were nice fillets meant for pan-frying that costs RM 79.90 per kg. There was another batch of salmon steaks going for half the price but I didn’t like the look of the sad pieces of fish lying about so I paid premium for the fresher salmon.

You will need:

Fish Pie Recipe

  • 300 grams salmon fillets
  • 150 grams smoked salmon
  • 250 grams snow crab claw legs
  • 4 sprigs fresh flat-leaf parsley
  • 3 bunches of spinach
  • 3-4 Brussels sprouts
  • 800 grams of red potatoes
  • 200 grams freshly grated Cheddar cheese
  • 1 lemon

I bought a packet of parsley and you can see the difference between flat-leaf and curly-leaf parsley. There are equal amounts of each in the pack, I just used the flat-leaf ones, also known as Italian parsley.

Fish Pie Cheese

I chopped up all the vegetables into small pieces and lined the bottom of the baking trays with it before adding the grated Cheddar cheese on top. I used two, and that was a mistake, you can’t split a recipe in half like that, will show you why later.

Red Pontiac Potato

Meanwhile, I peeled the Red Pontiac potatoes for chopping into 2 cm chunks. Red potatoes are perfect for baking but due to it’s starch content, is not so suitable for frying. These aren’t the potatoes for French fries, but it’s good as mash.

The red potatoes are then dumped into a pot of salted water and boiled for 15 minutes until soft.

Skinning Salmon

I started on the fresh salmon fillet after that – you need to skin it since the recipe calls for the fish to be skinned so the easiest way is to de-skin it is to run a sharp knife under it.

I chopped up the fresh salmon fillet into bite sized pieces and did the same for the smoked salmon and snow crab claw legs…

…before dumping everything into the baking trays.

Mixed Fish Pie

You just need to give it a good dousing of extra virgin olive oil and add some salt and black pepper before mixing *everything* thoroughly.

The red potatoes are mashed and then put on top of the fish pie as a topping. This is where I went wrong coz I used two baking trays and the potatoes were barely enough to cover both!

I actually needed a deeper baking tray which would provide the same surface area for the potatoes but I really had to stretch the potatoes to cover both trays.

I put both of the fish pies into the oven for 40 minutes and they came out perfect!

The kids both tried it but declared it to be too salty as I had forgotten smoked salmon is already seasoned and added too much salt to the recipe.

My better half also thought the same, and I had a huge thirst after eating all that due to the sodium.

I think I’ll use cod next time instead of salmon, and hold back on the liberal handfuls pinches of salt. smirk

Dinner at Little Beach Boat House, Port Stephens

Little Beach Boat House is a quaint little place just beside the bay at Port Stephens. You can hear the waves coming in at night and the wait staff is a duet of twins! The two Aussie girls look so much like each other that I just had to take a photo of them.

The service is attentive and friendly and they had a special of the day, which I ordered. I actually recorded one of the twins reciting the dish in question so I can remember it, and she kindly obliged. Heh. This is one of the best restaurants in town according to Sharon, who dined with us last night.

There was popcorn on the table – a growing trend that I’ve noticed in a lot of restaurants, who serve this in lieu of bread. I think it’s great! The dishes has a bit of a modernist twist in them too, with foams, purees and jelly sauce components on most of the dishes.

Entree

Seared Scallops ($19.00)

This is really good! I like how the seared scallops and chorizo pairs up. Wei Zhi and I ordered different entrees and mains so we could try different things on the menu and this is her order.

Beef Cheek & Potato Croquette ($18.00)

I was more interested in beef cheek – a cut which is really flavorful if done right and they do it well here. It’s generously mixed into the crispy potato croquette and a nice touch is the black garlic mayo (the fermented garlic we use to make bak kut teh back home).

W/ soy roasted sweet potato, cashews, steamed greens and sesame & rice wine dressing

I’m not a huge fan of salmon but according to Sharon (who also watches MasterChef Australia and offered me some) they did everything right in the “checklist” – crispy skin, no bones, juicy inside.

Seared Veal Medallions ($34.00)
W/ Jerusalem artichokes, baby spinach, green beans and parmesan & sage butter

I’ve cooked Jerusalem artichokes before, which is totally different from the globe artichoke. I ordered a Sauvignon Blanc which goes very well with my fish dish but makes the veal tastes rather bitter.

This is my order, the special of the day. I didn’t know it was fried though, since I don’t particularly like grilled fish (any other cooking method is better) but I kept an open mind. I wanted to eat barramundi since Australia is one of two countries where you can find it. I asked the waitress for a wine pairing and she suggested either Sauvignon Blanc or a Riesling but “personally I’ll go for the former”.

I took her advice and it tasted great with the barramundi! The Sauvignon Blanc is very sweet and pairs well with the fish. The skin of the barramundi is crisp and it’s a classic white fish which flakes well but has a stronger taste than other popular white fish like cod and John Dory. The barramundi is excellent when eaten with the sweet and smoky roast pumpkin though!

This is probably the restaurant’s flagship dish. It came on a huge wooden platter and has 3 (three) different pork items on it, including a crispy pork belly the size of a small steak! It’s beautiful and the apple jam has been jellyfied, giving it a bit of a modernist twist.

The dinner at Little Beach Boat House was great, and the company better – we talked late into the night about everything, and I learned a lot about the Port Stephens area too. Tourism New South Wales and Tourism Australia picked up the bill (thanks Duglass and Sharon) and we all had a bit of fun with the friendly twin waitresses who look so much alike! 🙂

Christmas Eve Dinner @ Senja, Saujana Hotel

Senja is an Italian restaurant despite it’s Malay sounding name. The food is prepared by Chef Filippo Giunta, a friendly Sicilian which I got to meet later. It is best known for it’s homemade pasta and pizzas (they even have a firewood oven) and the ambiance – it’s built on stilts above a man-made lake and the view is quite pleasing.

I was there to check out their Christmas Eve Dinner. I haven’t been here for a while and I thought I’ll come and check out their new pasta machine. Thanks for the invite Azimy and Azirah and it’s a pleasure to meet you Karen!

The five course meal was preceded by their wonderful home-made bread, which I absolutely loved. It came with four different types of dip – the whole olives and sun-dried tomatoes being two of my favorite.

This is the first course proper – the amouse-bouche. It’s a nicely cooked piece of scallop topped with black caviar with potato mousse and dill oil. I thought it’s a nice start for the Christmas Eve course.

I really, really liked this. The circular tissue-thin Black Angus is aged well so you can taste the intense flavors in this apt appetizer. I wish I could have more of this. Perfectly dry-aged (I think, forgot to ask) beef.

There are three main courses you can choose from:

Homemade Linguine Pasta with Wild Mushrooms and Black Truffle

This would be my recommendation for the main course if you’re not one of those people who must have turkey on Christmas Eve. I’ve seen how they make their pasta in-house and the linguine is cooked to perfection – dictionary definition of “al dente”. I enjoyed the simplicity of the dish, spruced up by generous shavings of black truffle.

There’s nothing wrong with this dish, but it didn’t quite hit the spot for me. It’s a generous slice of salmon on top of spinach and it was the first main dish that I ate but I felt that the salmon overpowered all the other flavors in the dish and it was a tad overcooked but then again I won’t pretend to be a food critic. Heh. I just felt that the other two dishes were much better.

I really liked the crisp turkey skin and the juicy turkey meat. I loved the stuffing. It’s a classic Christmas dish that has everything done right including the apple cubes beneath the turkey that gives it a sweet dimension. Highly recommended, I would go for this or the pasta for the main course. Come to think of it, I’ll recommend this, coz you can have pasta any other time. 😉

This is hands down the best dessert I’ve had this month, or maybe even this quarter. I might even hazard to go “this year” due to this wonderful creation from Chef Filippo Giunta. It’s not a regular tiramisu made with Savoiardi – that has been made passé with this “tiramisu” made from Panettone. Just think of Savoiardi being substituted with Panettone Antica Ricetta and you’ll have an inkling of what this marvelous dessert tastes like.

It’s awesome – there’s no other word to describe it. The Mascarpone and coffee cream dominates the Panettone that has been rendered soft and yielding and the burst of fruitcake combined with the thick, cloying cream resulted in a truly fearsome dessert. It’s delicious! 😀

This is the Panettone used for the Christmas Eve Dinner dessert at Senja. It’s the specialty Christmas cake of Milan which traces its roots to an ancient Franciscan cloister in Saronno. It’s orgasmic – there’s a bit of fruitcake to remind you of the festive season and I was very impressed by this dessert. The Mascarpone and coffee cream slathered on top of this Panettone “tiramisu” takes the cake (haha). I’ll go just for this dessert again!

We also had mince pies, biscuits and gingerbread cookies after the meal and I was so enamored by the Panettone “tiramisu” that Chef Filippo Giunta came out with what the dome-shaped Christmas cake. The Christmas Eve Dinner at Senja, Saujana Hotel is priced from RM 160++ to RM 280++ with optional wine pairing.

They also have a New Year’s Eve set dinner priced at the same range where you can watch fireworks by the lake. Senja Restaurant is also starting a new tradition of Christmas Day and New Year’s Day brunches with buffet style antipasto and desserts from RM 90++. They can be reached at 03 7843 1234 for reservations. Oh, and they also sell that Panettone cake by itself but it won’t nearly be as good as the one made into “tiramisu”. Heh.
